Dans ce havre de paix, Olivier Martin, et sa brigade, compose ainsi des mets parfumés comme des poissons du lac ou crustacés ainsi que des plats sans gluten, le tout aromatisé de piments, de thé, de rhum ou de « ti punch », des plats basés sur le goût, qui s'accordent à la perfection aux vins coups de cœur, et de sa propre sélection, "les Oliviers".
