About the job
The Fairmont Monte Carlo is a luxury hotel located in the heart of the Principality of Monaco. It features 596 rooms, suites, and residences as well as four restaurants, three bars, a Fitness Center, a Spa, two swimming pools, Room Service, and a Catering service.
Reporting to the F&B Manager, the key responsibilities and functions of the position
include, but are not limited to:
- Operational function:
- Actively participates in the service and sale of alcoholic beverages in the restaurant
- Collaborates in daily "pre-shift" meetings and any other necessary meetings to achieve the best results
- Conducts regular product training sessions
- Establishes and maintains effective working relationships between different departments (purchasing/pantry/F&B/events/sales…)
- Offer improvement:
- Contributes to sourcing, selection, and referencing of various alcoholic beverages of the hotel: wines, champagne, beers, spirits, digestifs, liqueurs, cocktails…
- Proposes new references and vintages considering the different catering concepts.
- Maintains relationships with various suppliers to expand and update the "beverage offer".
- Updates the banquet catering offer on wines/champagnes/beers
- Financial management:
- Implements a consistent pricing grid for alcoholic beverages across the various restaurants/bars.
- Participates in managing the beverage cost of the restaurants, more specifically at Nobu, Lobby Lounge, and IRD:
- Stock management, inventory, pricing, and sales control
- Benchmarking & Marketing:
- Stays informed about local competitors by comparing their offers and pricing
- Engages suppliers to promote products
- Suggests actions and participates in executing the communication and marketing plan: mixology master classes, wine tasting, special wine dinners, cocktail programs, etc.
- Keeps up to date on new consumption trends and new products

- Required hotel training
- 3 to 5 years of experience in a similar position
- Experience within an international hotel chain in an economic capital and/or abroad
- Team management
- Fluent in French and English
- Strong team management skills
- Ability to work with attention to detail, speed, and autonomy
- Organize and be able to delegate tasks while monitoring their progress
- Knowledge of hygiene and HACCP
- In-depth knowledge of food products, wines, and spirits
- Proficient with operational IT tools (Outlook, Office Suite, Micros, Opera)
