We are looking for an experienced cook, able to work at a fast pace and maintain consistent quality even under pressure.
The ideal candidate will master the basics of modern Mediterranean cuisine and be able to manage services of 80 to 120 covers with two cooks in the kitchen.
- Daily preparation and mise en place (meats, fish, sauces, pasta, risottos, vegetables, garnishes).
- Cooking execution: grills, fish, risottos, sautés, sauces, and finishing.
- Participation in the preparation and cooking of pizzas according to house standards.
- Smooth and quick management of orders during service, in coordination with the second cook.
- Strict adherence to hygiene, food safety, and cleanliness standards.
- Maintaining the organization of workstations (hot, cold, pizza).
- Contribution to improving efficiency and quality in the kitchen.
- Strong experience in a high-output restaurant (100 covers and more).
- Ability to work under pressure, with speed and precision.
- Good mastery of cooking techniques:
- Meats (grills, plancha, sauces)
- Fish (short cooking, grills, sauces)
- Pasta and risottos
- Pizzas (preparation, cooking, topping)
- Excellent organization, anticipation, and sense of priorities.
- Teamwork and smooth communication during service.
- Rigor, punctuality, and autonomy.
