Job Description
JOB DESCRIPTION
You are part of the Pastry brigade of Chef Titouan Claudet. Under the orders of the chef and sous chefs, you will be responsible for all types of pastry work. As a Pastry Chef de Partie, you are an ambassador of the luxury service offered to our clientele. Your daily tasks will be as follows:
- Receiving goods, checking weights and freshness
- Storing goods, controlling stock rotation
- Preparing the viennoiserie range
- Preparing ice creams & sorbets
- Making basic recipes
- Preparing mise en place
- Plating dishes
- Making and plating amenities
- Supervising the work of subordinates throughout the day
- Perfect mastery of sanitary standards and food usage
- Familiarity with food ratio, production cost
- Estimating orders and raw material needs
- Planning and organizing work

Qualifications
PROFILE SOUGHT
- Experience: You have a diploma in Pastry and/or from an equivalent Hotel School and have 2 years of experience in a similar position in a starred restaurant and/or 5* Palace.
- Personality: Knowledge of pastry, rigor, dynamism and a good team spirit are the main qualities sought for this position.
- Languages: Must speak, read and write French and English.
- Availability: As soon as possible
