About the job
A contemporary European restaurant inspired by Portuguese culture and flavors in the heart of Luxembourg's business district. Bringing a touch of modernity to upscale classic recipes, this concept adds diversity to the table. This restaurant is located in a recently renovated international chain hotel with 260 rooms, the Novotel Luxembourg Kirchberg.
General Missions
• Contributes to the smooth running of the service and the quality of production by managing their section
• Is responsible for a kitchen area
• Ensures organization, quality, and service
• Independently produces dishes according to technical sheets
• Manages the work of commis, apprentices, and interns
• Knows the Heartist values and applies them daily (Feel Welcome, Feel Heartwarmed, Feel Incredible, I Belong)
Main Responsibilities
Customer Relations:
• Adapts to specific customer requests
• Takes into account customer feedback (TripAdvisor, Trust You ...)
• Ensures excellent relationships with suppliers
Activities and Tasks:
• Manages stocks and supplies by placing regular orders
• Ensures the conformity of ordered goods, their invoicing, and optimal storage
• Communicates any risk of shortage to the service
• Organizes and supervises the setup of preparations and dishes according to activity forecasts
• Ensures proper allergen tracking (menus, suggestions, banquet menus ...)
• Transmits necessary information to the hotel's various departments and to members of their service
• Develops menus and dishes in collaboration with the entire team
• Ensures presentation, quality, and correct temperature of dishes
• Sends dishes respecting timing
• Ensures proper communication of information to the relevant departments
• Adapts organization and work pace according to customer flow
• Regularly brings new ideas for buffets, breaks, and menus
• Creates the technical sheet for the weekly suggestion considering various costs
• Regularly contributes new ideas for breaks and menus
• Is involved in achieving service objectives (respect for technical sheets and procedures)
• Conducts inventories, data entry, and explains consumption variances
• Contributes to good equipment management by avoiding breakage
• Ensures smooth running of the canteen service
Hygiene / Safety of People / Environment
• Ensures cleanliness of the workplace and food safety by daily respecting HACCP hygiene rules (E-pack Hygiene)
• Checks the good condition and cleanliness of colleagues' uniforms
• Respects instructions for use and safety of equipment provided
• Ensures compliance with hotel safety instructions (fire ...)
• Respects commitments of the Environmental Charter (energy saving, recycling, waste sorting ...)
