The Assistant Head Sommelier's mission is to assist the Head Sommelier in the daily management of the wine & spirits offer throughout the hotel, to ensure excellent service, and to actively participate in team training to guarantee a unique customer experience.
On a daily basis, you will be responsible for:
Operational support and coordination
- Assisting the Head Sommelier across all points of sale: restaurants, bar, banquets
- Participating in the development and updating of wine lists
- Ensuring the coherence of the wine offer with the culinary identities of each outlet
Selection and cellar management
- Contributing to the selection of wines and the building of the cellar
- Ensuring compliance with standards of preservation, rotation, and hygiene
- Supervising regular inventories
Reception, advice, and sales
- Providing personalized welcome to guests and guiding them in their choices
- Mastering food and wine pairings by working closely with the Chefs
- Adapting advice according to preferences, meal context, and customer profile
Trends and Innovation
- Following trends in the wine and spirits world
- Participating in the development of internal oenology skills
Orders and supplier relations
- Monitoring orders and supplier relations with the Head Sommelier
- Contributing to sales analysis and profitability of the wine offer
