About the job
555+ is a Thai street food restaurant. We have successfully tested our concept as a pop-up format at various locations in the canton of Zurich. Now we have found a permanent home at Hotel Greulich - in the heart of District 4.
We are immediately looking for a highly qualified head chef with a clear focus on contemporary Thai cuisine at the highest level.
Your profile:
- At least 4 years of professional experience in a Michelin-starred restaurant in Thailand
- Age between 20 and 30 years
- Male
- Fluent knowledge of Thai and English, both spoken and written
- Strong ability to regularly develop changing menus that correspond to modern Thai cuisine
- Solid experience with French cooking techniques and their integration into modern Thai cuisine
- High quality standards, creativity, and a pronounced sense for product, taste, and presentation
- Resilience, discipline, and professional work in a demanding kitchen environment
- Extensive knowledge of ancient Thai food culture, old recipes, and special products used for it.
- Experience in making various curry pastes, fermented foods, as well as Thai drinks
Your tasks:
- Preparation of hot and cold dishes at the highest level – à la carte as well as for changing menus
- Development, planning, and regular further development of menu and dish lines in the sense of contemporary Thai cuisine
- Responsibility for the culinary implementation of our vision as well as active participation in shaping the concept
- Production of curry pastes, stocks, fermentations, and traditional as well as modern Thai components from scratch
- Ensuring consistently high quality, authenticity, and presentation of all dishes
- Organization and control of mise en place as well as ensuring smooth service operations
- Responsibility for hygiene, cleanliness, and compliance with all HACCP standards
- Bringing in your own ideas, recipes, and techniques for the continuous development of the kitchen
