Job Description

Reporting to the Food & Beverage Management, you contribute as Head Sommelier to the excellence of the oenological service offered to our clientele, ensuring compliance with luxury standards and creating unique experiences within our various dining outlets. Your daily tasks will be as follows:

• Supervise, manage and support the sommelier team of 3 people to guarantee excellent service.
• Define and communicate service standards related to the sommelier role and ensure their daily application.
• Advise and assist clients in their choice of wines, champagnes, spirits and beverages, offering personalised experiences.
• Ensure food and wine pairings in collaboration with the kitchen teams to enhance the gastronomic experience.
• Be responsible for the presentation, coherence and evolution of the wine list.
• Participate in wine selection, tastings, meetings with producers and development of new references.
• Manage the cellar and oversee stock-related operations: orders, receipts, storage, inventories, cost monitoring and product rotation.
• Contribute to the development of exclusive oenological experiences for our clientele.
• Ensure compliance with gastronomic standards and have a good knowledge of the requirements related to establishments recognised by the Michelin Guide.

Qualifications

Experience: Holder of a sommelier diploma and/or equivalent hotel training, you have proven experience in a similar position within a starred restaurant, a gastronomic establishment or a 5* Palace.

Personality: Passionate about sommellerie, you possess excellent knowledge of French and international wine regions. Leadership, attention to detail, elegance in service and team spirit are essential qualities for this position.

Languages: Proficiency in French and English, both spoken and written. A third language would be an advantage.

Availability: From 1st September 2026. Work on weekends and public holidays.
