Grade and annual salary (including 13th month salary):
5 63,297.-- / 99,178.--
Responsibilities:
assume shared responsibility for managing the Central Kitchen laboratory
– coordinate the work of assigned inmates and actively collaborate in the training activities of inmates (apprenticeships)
– independently carry out production cycles in accordance with the daily planning
– ensure hygiene and food cleanliness standards according to company HACCP levels and complete the required training to acquire appropriate safety skills
– participate in the organisation of internal events and in the preparation and planning of the menu
– ensure the smooth economic operation of the laboratory and be willing to attend professional development courses
– ensure and maintain order and safety in the laboratory, collaborating with custody staff
– contribute to the overall smooth running of the prison facilities and take on additional tasks and duties as directed by management
Requirements:
- general requirements:
- Swiss citizenship
- minimum age: 35 years, birth years 1991 and earlier accepted
- Federal Certificate of Competence (AFC) as a cook
- possession of additional certifications or diplomas in the field of expertise and dietetics may be considered an advantage
- several years of proven professional experience
- certificate as an apprentice trainer (master of apprenticeship), or willingness to obtain it
- experience in apprentice training may be considered an advantage
- possession of a category B driving licence (manual transmission)
- strong motivation for the job
- physical and psychological requirements:
- good general health, in particular absence of conditions incompatible with the regular performance of the Head Chef role
- good physical and stress resistance
- psychological suitability for the role
- flexibility to work split shifts including weekends and public holidays
- skills:
- proficiency in Italian (speaking and writing) and good knowledge of at least one other official language (speaking)
- adequate computer skills at user level and good command of the Office suite
- ability to lead and coordinate collaborators; ability to work independently; ability to collaborate and work in a team
- sense of responsibility, systematic approach, initiative and strong organisational skills
- ease in interpersonal relationships
- reliability, precision, impartiality and discretion
- ability to manage conflict and stress situations; problem-solving skills
- conduct and background:
- a police information check will verify the absence of elements or any background incompatible with the Head Chef role, through assessment, in particular:
- of the seriousness or nature of any offence committed and recidivism
- good reputation; in particular, no behaviour incompatible with the Head Chef role in prison facilities such as dishonourable conduct, disrespect for ethical values shared by society, character predispositions to conflict, etc.
- no ongoing unjustified enforcement proceedings and no certificates of asset deficiency

Employment conditions:

- working hours: 42 hours per week (for a 100% employment rate), flexible or according to service needs
