About Orient Express Venice at Palazzo Donà Giovannelli
Orient Express will open its second hotel in Italy in the exceptional city of Venice. Architect and interior designer Aline Amar d'Amman, together with her studio Culture in Architecture, has been commissioned to design and decorate the spaces. Venice, once the gateway to Constantinople and a legendary stop of the Orient Express train – which opened in 1919 with the completion of the Simplon Tunnel connecting Switzerland to Italy – will be the site of the second Orient Express hotel, scheduled to open in 2026.
The Commis de Cuisine plays a key role within our Kitchen team, supporting the preparation and presentation of an excellent gastronomic offer in line with the hotel's standards of quality, elegance, and precision.
Reporting to the Chef de Partie and the Sous Chef, the Commis de Cuisine contributes to delivering a refined and memorable culinary experience, respecting the values of craftsmanship, consistency, and guest centrality that characterize our five-star luxury service.
Main Responsibilities
- Supports the preparation, cooking, and presentation of dishes in various kitchen sections under the supervision of senior Chefs.
- Ensures that the mise en place is prepared, organized, and maintained according to the highest quality standards, guaranteeing full service operability.
- Follows recipes, portion control, and presentation specifications established by culinary management.
- Strictly adheres to hygiene, safety, and sanitation procedures in compliance with HACCP guidelines and the hotel's food safety protocols.
- Keeps workstations and kitchen equipment clean and orderly throughout the shift.
- Collaborates with kitchen colleagues to ensure smooth and efficient operations during preparation and service phases.
- Participates in periodic briefings, training sessions, and tastings to enhance skills and product knowledge.
- Supports the receipt, inspection, and proper storage of supplies, respecting hotel standards and food safety regulations.
- Promptly communicates to the Chef de Partie or Sous Chef any product shortages, equipment issues, or other criticalities.
- Actively contributes to reducing food waste through proper storage, rotation, and use of raw materials.
- Respects personal care and image standards, consistently embodying the professionalism required in a luxury hospitality context.
- Demonstrates passion for culinary art, eagerness to learn, and strong commitment to ensuring excellence in every dish.
- Supports the kitchen team in preparing events, banquets, and special gastronomic experiences when needed.
- Knows and respects hotel procedures regarding emergency, health, and safety, contributing to maintaining a safe work environment.
- Adopts respectful and teamwork-oriented behavior, fostering a positive and inclusive work climate.
- Diploma or culinary certification obtained from a recognized hotel institute or cooking school.
- Previous experience in a professional kitchen, preferably in luxury hospitality or fine dining contexts.
- Solid knowledge of basic cooking techniques, food preparation, and kitchen operations.
- Good knowledge of kitchen hygiene standards and food safety regulations (HACCP).
- High attention to detail, cleanliness, and quality in dish preparation and presentation.
- Proactive attitude, desire to learn, adapt, and grow within the kitchen team.
- Willingness to work flexible shifts, including evenings, weekends, and holidays, according to operational needs.
- Strong team spirit, with excellent communication and interpersonal skills.
- Fluent knowledge of Italian; basic knowledge of English is preferable, additional languages are a plus.
