Organize the daily management of the kitchen dedicated to the Palace Bar, ensuring the quality, speed, and consistency of the dishes offered.
Supervise the small team assigned to the bar area, ensuring their training, efficiency, and adherence to the house standards.
Create, refine, and renew a food menu in perfect harmony with the bar's identity: elegant, creative, and adapted to a demanding clientele.
Collaborate with the head bartender and sommelier to design food and drink pairings that enhance the customer experience.
Effectively organize schedules and setup to ensure smooth service, whether during the day or at evening events and special occasions.
Manage orders, stock monitoring, and food costs, with a constant focus on optimization and waste reduction.
Ensure strict compliance with hygiene and safety standards in the kitchen, maintaining a clean and legally compliant workspace.
Work closely with the front-of-house, event, and management teams to provide a consistent and highly qualitative experience to every Palace Bar customer.
Manage the food cost under the supervision of the Executive Chef.
