About the job
• Prepare the dishes of their station by respecting the recipes, technical sheets, and quality standards of the establishment.
• Apply seasonal cooking, highlighting fresh and local products provided, and respecting the defined culinary orientations (light dishes, vegetarian options, etc.).
• Ensure the application of HACCP standards at their workstation (hygiene, cleaning, storage, traceability).
• Ensure the daily setups necessary for the smooth running of services.
• Control the quality, consistency, and presentation of preparations before sending.
• Participate in managing the raw materials of their station, limiting waste and reporting needs or anomalies.
• Participate in receiving goods and visually check product conformity.
• Follow ordering and stock instructions defined by the Collaborating Head Chef or Sous-Chef.
• Occasionally propose suggestions or improvements, in line with the culinary direction and after validation by the hierarchy.
• Supervise the commis and apprentices assigned to their station, transmitting work methods and best practices.
• Ensure proper maintenance of equipment and their workstation, respecting internal procedures.
