Kitchen Supervisor at the Hospitality Service
We are looking for a kitchen supervisor for our restaurants "Le LAB" and "La Ferme" at an activity rate of 80%-100%.
Context
The Lausanne University Hospital (CHUV) is one of the 5 Swiss university hospitals. Thanks to its collaboration with the Faculty of Biology and Medicine of the University of Lausanne and EPFL, CHUV plays a leading role in medical care, medical research, and education.
The catering sector, cafeterias, kiosks, and snack bars are attached to the Hospitality Service of the Hospital Logistics Department. It is responsible for the sale of fast food items in self-service at the various sales points of the hospital city and external sites. The service offers staff and visitors catering that corresponds to the institution's orientation as well as the market offer.
Mission
- You produce and distribute quality dishes, according to professional rules
- You manage a cooking station and serve dishes in front of customers (front-cooking)
- You develop the offer and plan menus in collaboration with the Service Manager
- You ensure product ordering and stock management
- You supervise a team of 7 people
- You are responsible for the proper sale of products
- You prepare and serve during certain events
- You ensure compliance with and application of hygiene rules in force within the institution.
Profile
- You hold a Federal VET Diploma (CFC) as a cook or an equivalent recognized title
- You have at least 5 years of experience in the catering field
- You have training or experience in team management
- You are comfortable with production tasks and raw material management
- You have experience in front-cooking, an asset
- You have a specialization in vegetarian cuisine, an asset
- You ensure the application of self-control principles (ODAI) as well as hygiene standards (HACCP)
- You are customer-oriented and comfortable with sales
- You enjoy being creative by imagining and testing culinary combinations
- Basic knowledge of English is desired (level A2)
- You are comfortable with common office tools
- You are organized, rigorous, and autonomous.
