Your day to day

Join us as our new Sous-Chef – Peruvian Cuisine M/F:


For this key position, your main duties will be to:


  • Establish and prepare menus and compose dishes related to Peruvian and International cuisine for the restaurants and the bars, for banquets and cocktails as well as for the Room Service.

  • Keep abreast of the latest trends in Peruvian cuisine in order to innovate and offer new concepts and dishes.

  • Know perfectly the Peruvian culture in order to respond to any questions from guests and staff.

  • Introduce the Kitchen brigade to Peruvian gastronomy and teach them special recipes and technics.

  • Organize, coordinate activities and preparations, ensure that recipes are respected.

  • Supervise and give instructions to the Kitchen brigade.

  • Supervise your service’s staff (administration, payroll, work time, planning).

  • Manage regular and casual staff costs in collaboration with the other managers in the F&B Department.

  • Replace Kitchen staff in case of absence or help during rush hours.

  • Work on the preparation and respect of the annual budget.

  • Work in collaboration with the other managers in the F&B Department.

  • Regularly analyze the activities and trends of the competition.

  • Participate in the development of the annual marketing plan for the Kitchen.

What we need from you

With a degree in Culinary Arts with expertise in Peruvian cuisine, you have minimum 3 to 5 years of experience in a similar position within a hotel establishment of the same category (4- or 5-star) and/or in a Peruvian restaurant. You have a solid experience and knowledge in team management. You have excellent knowledge of HACCP norms and hygiene standards as well as strong culinary skills and capacity to exploit new trends and cooking methods.

You are fluent in Spanish, French and English. Mastering another foreign language of one of our target markets (Germany, China, India, Italy, Middle East, Netherlands, Russia) is highly desirable.

Highly organized and focused, you are acknowledged for your rigor and for your ability to work under pressure. You like working in a fast-paced environment and are autonomous, reactive and flexible. You aim to share your passion and knowledge of Peruvian gastronomy with your guests and your colleagues and are willing to help when needed.

This position is opened to Swiss citizens and EU passport holders.
